Tomatillo Burritos

Salsa:
8 Green tomatillos
2 cloves garlic
1/4 onion
2 cubes chicken bullion
1/4 c. water
small bunch cilantro

Take the thin outer skins and the stem off the tomatillos and boil them for a few minutes (just until tender). Place in blender with other ingredients and blend together. (makes about 3 cups).

Burritos:
1 lb ground beef
1 onion, chopped
1 1/2 cloves garlic
1 red bell pepper
1 c. beef stock
15 oz can black beans
1 1/2 c. tomatillo salsa
2 Tbs. cilantro
Monterey Jack cheese
Tortillas

Preheat oven to 325. Wrap tortillas in foil and place in oven to warm.

In a skillet: brown beef iwth onion, garlic, and red pepper. Then add beef stock, black beans, and tomatillo salsa. Turn heat to hight 5-6 minutes till mixture thickens.

Remove from heat and add 2 Tbs. cilantro. Remove tortillas from oven and stuff them with the beef mixture. sprinkle with Jack Cheese and tomatiollo salsa. put in the oven for 8-10 minutes, or until warmed through. Serve with sour cream and rest of the tomatillo salsa.
