Homemade Salsa

Ingredients:


  • 1 can of whole tomatoes (or I like to eyeball a bunch of whole tomatoes from my garden)
  • 4 (10 oz) cans of Rotel (diced tomatoes with green chilies & onions). You don’t need to drain them, unless you are using fresh garden tomatoes, in which case I recommend draining these.
  • 1 jalapeƱo (seeded, or leave in a few seeds if you like some kick)
  • 1/2 onion
  • 1 clove garlic
  • 1 bunch cilantro
  • 1/2 t salt
  • 1/2 t sugar
  • 1/2 t cumin
  • juice of one lime
  • Optional: add 1 teaspoon red pepper flakes. It doesn't make it too spicy, just adds a little spice and some deeper flavor.

Directions:


Pulse ingredients in a blender or food processor until you get the consistency and chunkiness that you'd like. Eat within a few days or you can freeze for later.

TIP: When freezing, be sure to leave enough space in jar or container to allow for expansion.
